Ingredients
- 2 cans lump crab meat
- 1 bunch green onions (green tops, cut fine)
- 3 Tbsp Lemon Juice
- 1⁄4 cup Chili Sauce
- 5 Tbsp Mayo
- 8 English muffin halves
- 2 eggs, separated
- 1/3 cup shredded cheddar

Directions
- Put crab in bowl. Add onions, 2 Tbsp lemon juice, chili sauce, 1 Tbsp mayo. Mix until blended, then spread on toasted muffins
- In another bowl, blend 1 Tbsp lemon juice and 4 Tbsp of mayo. Blend in egg yolks
- Beat egg whites until they are firm and hold peaks. Fold into egg mixture and then add the cheese. Spread over the muffins, covering crab meat.
- Arrange on broiler rack. Broil until golden brown, approximately 3-4 minutes.
