Moroccan Tomato Sauce
This fresh tomato sauce accompanies lamb throughout Morocco.
Ingredients
1.5 pounds ripe tomatoes, peeled and cut into chunks
3 oz tomato paste
1/2 medium onion, chopped fine
3 garlic cloves
2 tablespoons italian parsley
1/2 teaspoon salt
1 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon sugar
1/4 teaspoon Turmeric
Dash Cayenne Pepper
Directions
Heat a saucepan over medium heat, add oil, garlic and onion. Sauté until golden, about 1 minute. Add remaining ingredients and puree with immersion blender. Bring to a boil then reduce the heat to low and simmer, uncovered for 7-10 minutes. Set aside until ready to use.
