Moroccan Tomato Sauce

This fresh tomato sauce accompanies lamb throughout Morocco.

Ingredients

  • 1.5 pounds ripe tomatoes, peeled and cut into chunks

  • 3 oz tomato paste

  • 1/2 medium onion, chopped fine

  • 3 garlic cloves

  • 2 tablespoons italian parsley

  • 1/2 teaspoon salt

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

  • 1/4 teaspoon sugar

  • 1/4 teaspoon Turmeric

  • Dash Cayenne Pepper

Directions

  • Heat a saucepan over medium heat, add oil, garlic and onion. Sauté until golden, about 1 minute. Add remaining ingredients and puree with immersion blender. Bring to a boil then reduce the heat to low and simmer, uncovered for 7-10 minutes. Set aside until ready to use.
