German Potato Salad

Unlike the cold, creamy mayo-dressed picnic staple, German potato salad is served warm with a bacon vinaigrette.

Ingredients

  • 4 medium potatoes (washed, poked, and boiled)

  • 6 bacon strips

  • 2 Tbsp flour

  • 1⁄4 cup sugar

  • 1⁄4 tsp pepper

  • 1⁄2 cup vinegar

  • 1 1⁄2 tsp salt

  • 1⁄2 tsp celery seed

  • 1 cup water

Directions

  • Cook bacon in microwave for 6 minutes. Drain grease and save. Combine grease with flour, sugar, salt, seeds, and pepper. Microwave for 1-2 minutes. Add water and vinegar to mix and microwave for 4 minutes. Add crumbled bacon and diced potatoes and fold into mixture. Cool and serve.
