Broiled Crab Sandwiches
The “stinky” crab sandwiches that James is the only one that likes
Ingredients
2 cans lump crab meat
1 bunch green onions (green tops, cut fine)
3 Tbsp Lemon Juice
1⁄4 cup Chili Sauce
5 Tbsp Mayo
8 English muffin halves
2 eggs, separated
1/3 cup shredded cheddar
Directions
Put crab in bowl. Add onions, 2 Tbsp lemon juice, chili sauce, 1 Tbsp mayo. Mix until blended, then spread on toasted muffins
In another bowl, blend 1 Tbsp lemon juice and 4 Tbsp of mayo. Blend in egg yolks
Beat egg whites until they are firm and hold peaks. Fold into egg mixture and then add the cheese. Spread over the muffins, covering crab meat.
Arrange on broiler rack. Broil until golden brown, approximately 3-4 minutes.
