Broiled Crab Sandwiches

The “stinky” crab sandwiches that James is the only one that likes

Ingredients

  • 2 cans lump crab meat

  • 1 bunch green onions (green tops, cut fine)

  • 3 Tbsp Lemon Juice

  • 1⁄4 cup Chili Sauce

  • 5 Tbsp Mayo

  • 8 English muffin halves

  • 2 eggs, separated

  • 1/3 cup shredded cheddar

Directions

  • Put crab in bowl. Add onions, 2 Tbsp lemon juice, chili sauce, 1 Tbsp mayo. Mix until blended, then spread on toasted muffins

  • In another bowl, blend 1 Tbsp lemon juice and 4 Tbsp of mayo. Blend in egg yolks

  • Beat egg whites until they are firm and hold peaks. Fold into egg mixture and then add the cheese. Spread over the muffins, covering crab meat.

  • Arrange on broiler rack. Broil until golden brown, approximately 3-4 minutes.
